One of two new jams premiering this week at Holcomb Hollow, our Smoked Plum with Chinese 5-Spice Powder was inspired by the classic plum sauce that traditionally accompanies Beijing Duck. Made from farm-fresh local organic plums we put through the smoker with some aged cherrywood, each jar has just the right combination of cinnamon, ginger, cloves, star anise, and chili pepper, a spice blend known as wu–xiang-fen in Mandarin Chinese.
If you don’t have a tender duck laying around your freezer, this jam can be enjoyed in a similar manner by spreading it thick on a turkey sandwich. A bleu cheese pairs excellently with both turkey breast & plums, as well as brie & goats milk cheeses. If you like, add some mayo or mustard to the other slice of bread and garnish the sandwich with any fresh veggies you have laying around the house. You can also bake some potato chips as a side dish, just slice the potatoes finely, toss ‘em in oil with salt, pepper, & other spices, and bake them for about 45 minutes at 400 degrees, flipping the chips once.
